My daughter loves beans, so I try a number of different delicious bean soups and stews with her. This one was a family favorite!
Ingredients
1 tbsp olive oil
1 large onion
3 cloves garlic
1 jalapeno
1 tsp cumin
1 tsp chili
14.5 oz crushed tomatoes
1 can diced tomatoes
4 cups chicken broth
2 cans of black beans (28 oz total)
1 can of white beans
1 can of corn
1 chicken breasts
lime juice
cilantro
avocado
tortillas
Preparation
Dice the onions and saute over the oil. Add the crushed garlic and micned jalapenos. Add the spices. Stir for a minute.
Add the tomatoes and the broth. Shred in the cooked chicken breasts, add the beans and corn. Simmer for 15 minutes.
Serve with lime juice, avocados, cilantro, and tortilla chips.
