Chocolate coconut oatmeal

When the children are fed up with plain old cinnamon, raising, brown sugar oatmeal: it is time to bring this hitter out. Decadent, not overly sweet, but still reminiscent of a candy bar. Yet it is filling, and has all the heart-healthy attributes of whole grains.

Ingredients

2 cups old-fashioned oats

1 cup water

1 cup milk

plus milk as needed

1/4 cup dark chocolate chips

2 tbsp sugar

1/4 cup unsweetened coconut flakes

fresh raspberries to top

pinch of salt

Preparation

Mix the oats with the salt, water, and milk. Bring to a boil and simmer until desired consistency is reached. If it seems too dry, add some more milk.

Stir in the chocolate chips and coconut flakes. Serve topped with raspberries.
