Cherry pie bars

I love cherry pie filling, probably because it uses the familiar sour cherries that I enjoy from Hungary. These bars are moist and tasty, kind of like a shortbread with cherry filling. As a bonus, they are super easy to put together. Best served after it cooled down.

Ingredients

0.5 cup butter

0.5 cup sugar

0.25 tsp salt

2 eggs

1 tsp vanilla

0.25 tsp almond extract

1.5 cups flour

21 oz can of cherry pie filling

Preparation

Preheat oven to 350F. 

In a large bowl cream together the butter, sugar, and salt. Add the eggs one at a time, beating in each of them.

Mix in the extracts, and finally beat in the four.

Spread 1.5 cups of the dough into a 9-by-9 inch nonstick pan. Press up the sides a little. Spread the cherry filling on top.

Add the remaining dough to the top in dollops. Bake for 30 minutes or so, until light brown on the edges. Cool completely in the pan.
