I used to buy enchilada sauce in a jar, but my favorite brand has disappeared from the shelves. This sent me down a route of finding the perfect enchilada sauce recipe for me. This one is delicious, easy, and you will just want to eat it with a spoon!
Ingredients
1 yellow onion
6 cloves garlic
1 jalapeno
2x15 oz cans of diced tomatoes drained
2 chipotles in adobo
2 tbsp lime juice
salt
1 tsp cumin
0.5 tsp oregano
Preparation
Chop the onion and garlic and jalapeno roughly, toss with one tbsp of olive oil, and broil for 10 minutes, until charred. Add to a food processor.
Add the drained tomatoes, chipotle, spices and blend together until smooth-ish. Store in jars.
