Chicken with sun-dried tomatoes and capers

This was a quick and delicious one-pan dish. Tasty with a side of rice, mashed or roasted potatoes.

Ingredients
3 chicken breasts
a few tbsp flour
salt
black pepper
garlic powder
2 cloves garlic
1/3 cup sundried tomatoes
4 tbsp capers
1.5 cup chicken broth
0.5 cup heavy cream

Preparation
Cut the chicken breasts in half so they are thin slices. Season with salt. Dredge in flour seasoned with black pepper and garlic powder.


Crush the garlic, rehydrate and chop the tomatoes, chop the capers.

Sear the chicken breast pieces until light brown. Remove from pan. Add the tomatoes, capers, and crushed garlic. Stir and add the chicken broth.


Add back the chicken pieces and simmer for 20 minutes. Add the cream and simmer for another 10 minutes uncovered, so the sauce thickens.
