Peach pudding


An addictively delicious treat, this peach pudding if full of fruit and relatively low sugar. It is delicious with vanilla ice cream or just simple whipped cream.

Ingredients
1 cup flour
1/3 cup sugar
2 tsp baking powder
1 tsp cinnamon
0.5 cup milk
3 cups peach slices

1 cup water
1/3 cup brown sugar
3 tbsp white sugar
1 tbsp butter
0.25 tsp nutmeg

Preparation
Butter a 9-inch deep pyrex dish. Preheat oven to 400F.


Mix the flour with 1/3 cup sugar, baking powder, and the cinnamon.


Add in the milk and combine. Stir in peach slices and pour into greased baking shape.


In a small pot bring the water with the brown sugar and the remaining sugar, butter, and nutmeg to a boil. Pour onto peach mixture.


The mixture at this point looks kind of nasty. Don't be concerned, it becomes a beautiful cake while baking. Bake for 40-50 minutes, until knife inserted in the middle comes out clean and juices are bubbly around the edges.
