Kofta kebab


My favorite street food in Europe are the various Middle Eastern kebab shops. Their dishes are quick to prepare, fresh, tasty, and filled with vegetables. This was a satisfying replica of kofta kebabs.

Ingredients
1 lb ground beef
5 cloves garlic
1 tsp salt
half a grated onion
0.25 cup chopped fresh parsley leaves
1 tsp coriander
1 tsp cumin
1/8 tsp cinnamon
1/8 tsp allspice
0.5 tsp cayenne pepper
0.25 tsp ginger
0.25 tsp black pepper

Preparation
Crush the garlic and grate the onion half. Mix with the beef.


Add all the spices and the salt on top of the beef mix and knead for a few minutes, until well-mixed and paste-like.


Take three or four bamboo skewers and press the beef mix into 3 or four cylinders around the skewers. The cylinders should be about 1 inch in diameter.


Allow to sit in the fridge for a few hours covered. Grill on all sides on a 375-400F grill. I used my electric grill for this and it was delicious and coked through.

Serve with flatbread and a salad or dip (or both!).
