Hungarian biscuits (pogacsa)



These cheesy biscuits are commonly consumed in Hungary as a snack, by themselves. If you feel like hosting a beer or wine tasting, these are a perfect accompaniment.

Ingredients
300 g flour
1 egg
2 tbsp water
2 tsp dry yeast
1 tsp honey
8 tbsp butter
80 g yogurt
2 tsp salt
3 oz cheese
oil

Preparation
Dissolve the honey in the water and sprinkle on the yeast. Allow to bloom.

Measure on the flour and sprinkle with with the salt. Soften the butter and heat the yogurt to room temperature.


Crack in the egg and pour in the mix on top of the flour. Mix well and knead, adding a little more flour if necessary. Allow to rise for 30 minutes.


Roll out into a 0.5-inch thick rectangle, spread with a little oil and fold up. Allow to rise again for 20 minutes.


Roll out into a one-inch-thick rectangle and sprinkle with shredded cheddar. Cut 1.5- or 2-inch circles with a sharp biscuit cutter. Place onto a baking sheet. Allow to rise again for 20 minutes.


Bake in a preheated 375 F oven until light brown. Cool on a wire rack.
