Sausage and kale soup


A hearty soup, filled with vitamins, and delicious to boot.

Ingredients
3 hot Italian sausages
3 cups diced Russet potatoes
3 cups chopped kale leaves
1 small onion
3 cloves garlic
1 jalapeno pepper
3 cups strong broth
0.5 cup sour cream
2 tbsp flour
1 tsp hot paprika
0.5 tsp dried oregano
0.5 tsp pepper flakes
salt
black pepper

Preparation
Squeeze the sausage out of the casings to form small sausage balls. Brown in a pot.

Add the diced onion and diced jalapeno. Cook for a few minutes. Add the crushed garlic and the spices, cook for 30 seconds.


Pour in the broth and 2 cups of water. Add the diced potatoes and season liquid with salt. Boil for 8 minutes. Add the shopped kale and cook for another 10 minutes.


Mix the flour with the sour cream. Add some of the cooking liquid to the mixture, little by little, to temper it. Then pour in the sour cream mix into the soup. Cook for another 2 minutes. Serve!
