Pasta with basil and potatoes


This was an interesting pasta, a style as of yet unfamiliar to me. The sauce is thickened by potatoes boiled with the pasta. I preferred this dish when reheated on the next day. Very surprising.

Ingredients
5 oz basil leaves
1/3 cup olive oil
1/3 cup extra virgin olive oil
100 grams parmesan
3 cloves garlic
0.5 lb green beans
0.5 lb potatoes
1 lb linguine

Preparation
Peel and dice the potatoes. Boil for 7 minutes in salted water, then add the pasta.

Add the green beans 4 minutes prior to the pasta being done (according to the instructions on the package). Finish cooking, then drain using a colander, reserving half a cup of the cooking liquid.


Meanwhile, in a food processor blend the basil leaves, grated parmesan, garlic cloves, and oils until smooth.


Pour the sauce onto the drained pasta, potato, bean mix. Stir well and add some of the reserved cooking water to ensure the pasta is saucy and not dry. Serve warm!
