Moist corn cake


This corn bread is so delicious, that I would liken it to a cake more than a bread. Plain, or toasted with some butter and honey, slices of this bread make an excellent snack or breakfast dish.

Ingredients
1 cup cornmeal
1 cup flour
1/3 cup sugar
1 tbsp baking powder
0.25 tsp salt
1/3 cup oil
2 tbsp melted butter
1 tbsp honey
2 eggs
1.25 cup milk

Preparation
Butter an 8-by-11-inch baking dish. Preheat the oven to 350F.

 Mix the dry ingredients in a bowl. Whisk the eggs and add with the other wet ingredients.


Mix well and pour into baking shape.


Bake for 30 minutes, until golden brown on the edges and firm in the middle. Cool and serve. It's delicious!
