Lentil croquettes


A vegetarian dish that is an excellent substitute for meat in a pinch. It is also quiet delicious as a standalone or with some yogurt-based dip. Highly recommended.

Ingredients
1.5 cup cooked lentils
0.5 cup breadcrumbs
2 eggs
2 tsp onion powder
1 clove garlic
1 tsp paprika
0.5 tsp caraway seeds
salt
1 jalapeno
ricotta

Preparation
Mash the cooked lentils and mix with the breadcrumbs, spices, minced jalapeno, and eggs. Allow to sit for 10 minutes.


Adjust consistency with water and 1-2 tbsp ricotta to ensure it is not dry.

Heat a skillet with about 1-inch of oil in it until oil is hot. Shape lentil paste into discs. Deep fry until each side is golden brown.


Remove onto paper towels and serve warm.
