Chorizo and beans


This was a delicious side dish, that I ended up placing right on top of pieces of thin seared chicken breast. But I would absolutely eat it with a salad and a piece of bread as a satisfying meal.

Ingredients
4 oz chorizo
2 tbsp sundried tomatoes packed in oil
1 small yellow onion
15 oz canned soft white beans
1 clove garlic
0.25 tsp cayenne
1 cup of broth or 0.5 cup broth mixed with 0.5 cup white wine

Preparation
Dice the chorizo and heat in a skillet until some of the fat is rendered.

Peel and dice the onion and sautee with the sausage in the sausage fat. 


When the onions are softened, add the crushed garlic, chopped sundried tomatoes, and the cayenne. Cook for 30 seconds.


Add the liquid component(s) and the beans. Simmer down until the beans are in a thick sauce. Serve warm.
