Banana and oat energy bars


I'm still in a "fill-the-freezer-frenzy", but this recipe nearly failed at adding to my freezer stock. The product is so tasty and snackable, that on the first go around there were barely any bars left by the time they made it to the freezer (about 10 minutes after they came out of the oven :-).
Peanut butter, chocolate chips, and a diversity of nuts and dried fruit could easily be incorporated or substituted into this recipe for a more diverse outcome.

Ingredients
1.5 cup rolled oats
0.75 cup pepitas
0.75 cup sunflower seeds
6 tbsp chopped walnuts
6 tbsp chopped almonds
6 tbsp dried currants
1.5 tsp vanilla extract
0.5 tsp salt
1.5 tsp cinnamon
4 ripe bananas

Preparation
Lightly spray a 13x9-inch lasagna pan with oil. Preheat oven to 350F.




Mix the oats with all the seeds and nuts and currants.


Add the bananas in small chunks to a food processor. Add the cinnamon, vanilla, and salt to the bananas.


Blend until the banana mixture is completely smooth. Pour banana blend onto the oats and nuts. Mix well.


Press into the greased baking shape evenly. Bake for 30 minutes (until edges are lightly browned). Cool in pan, then slice and eat (or freeze)!
