Mediterranean wheat berry salad


A delicious side dish to bring to any potluck. Assuming you like wheat berries. It is also high-fiber and very healthy.

Ingredients
1 cup wheat berries
1 tbsp basil pesto
1 roasted bell pepper (or two colorful halves)
2-3 tbsp chopped red onion
salt
black pepper
olive oil
lemon juice

Preparation
Cook the wheat berries in broth or lightly salted water until al dente. Drain

Chop the roasted bell pepper into 0.5-inch pieces. Mix with a tsp of lemon juice, the basil pesto, and the diced onion.

Toss dressing with the wheat berries. Season with salt and black pepper. Allow the flavors to combine by resting in the fridge for a few hours.
