German apple pancakes


A quick breakfast (if you don't count the apple slicing, which is a serious project here).

Ingredients
6 apples
maple syrup
4 eggs
1 tbsp sugar
0.5 tsp salt
2/3 cup flour
2/3 cup milk
2 tbsp butter
cinnamon

Preparation
Preheat oven to 400F. Butter two 9-inch cake pans thoroughly.

Add the eggs to a food processor and process until homogeneous. Mix the sugar and salt with the flour. Add to food processor with 1/3 cup of milk and blend.

Add the remaining milk and mix until smooth. Distribute into cake pans and bake for 20 minutes. Reduce heat to 350F and bake for another 5-10 minutes.

Meanwhile, peel and core apples. Slice them into ultra-thin slices. Heat three quarters of the apple slices in a pan with some maple syrup and cinnamon to soften them a little.

When the pancakes are ready, slide one pancake onto a plate. Fill with apple-syrup filling. Top with the other pancake. Decorate with the remaining apple slices and drizzle with syrup. Serve warm!
