Chili lime chicken dip

A perfect addition to a party or potluck: easy to make and very delicious. Serve with tortilla chips or scoops.

Ingredients
1 lb chicken breast
2 tsp chili powder
2 tbsp lime juice
1.5 cup corn
1.5 cup chunky hot salsa
1.5 cup shredded cheddar
0.5 cup chopped sweet pepper
4 scallions
salt

Preparation
Chop chicken into chunks and add the lime and chili powder. Add a little bit of water, to almost cover the pieces. Bring to a boil and simmer for 45 minutes.


Drain the chicken and shred with a fork. It shreds very easily at this point. (And tastes delicious!)

Mix in the corn and salsa. Slice the scallions. Dice the peppers into 0.25-inch pieces. Mix in the cheese. Salt mixture to taste.


Microwave the chicken, corn, salsa, cheese mix until hot and cheese is melted. Stir in the peppers and scallions. Serve with tortilla or pita chips.
