Beans and kale soup


Child-tested and fully-consumed (without complaints!). While this soup may look...swampy, it is delicious! The quality of the outcome highly depends on the broth. So use your homemade best!

Ingredients
4 cups rich broth
5 cloves garlic
one small onion
1 tsp fennel seeds
0.5 tsp pepper flakes
1 tsp oregano
4 cups chopped kale leaves
2 cans of white beans
1 tbsp olive oil
Parmesan

Preparation
Sautee the onions, then add the crushed garlic cloves to olive oil. Cook until garlic is fragrant. Add chopped fennel seeds, pepper flakes, oregano, and broth.


Bring to a simmer and add the drained and washed beans, as well as the chopped and washed kale leaves. Cook for 15 minutes.


Serve with Parmesan shavings and crusty bread.
