Pasta with beans


An incredible comfort food. This dish surpassed all my expectations. Warm and comforting, perfect for a stormy winter night.

Ingredients
2 tbsp olive oil
4 cloves garlic
3 tbsp yellow onion
3 tbsp tomato paste
15 oz can soft white beans
5 oz small pasta
4 cups water
2 sprigs rosemary
2 oz romano cheese
salt
pepper
rosemary

Preparation
Sautee the onion on the olive oil, add the crushed garlic for the last 45 seconds. Add the tomato paste and stir for 30 seconds.

Add the drained beans and the pasta with the water. Season with 0.5 tsp salt (adjust to taste later). Add two sprigs of fresh rosemary.


Cook, stirring occasionally, uncovered, until pasta is tender. Reduce to desired consistency. This is supposed to be a kind of soup, so leave it a little liquidy.


Serve in two-three bowls, top with freshly-grated romano cheese.
