Chicken mini meatballs


A quick, pan-seared meatball option for pasta toppings.

Ingredients
4 chicken thighs
0.25 cup breadcrumbs
1 egg
salt
paprika
3 scallions
2 cloves garlic
black pepper
1 tbsp vegetable oil

Preparation
Pulse the skinless, boneless chicken thighs in a food processor, until small chunks are formed.

Mix the meat with the bread crumbs, egg, oil, minced garlic and scallions, and season it with salt, black pepper, and paprika.

Shape into 3/4-inch balls and sear on medium heat in a nonstick skillet until cooked on all sides. Add to pasta sauce to serve over pasta or in subs.
