Grilled zucchini and bean salad


What to do with an ample zucchini crop? I can't stand the stuffed, cooked, and other tasteless versions. However, thinly-sliced zucchini on the grill is absolutely delicious. It takes on an almost meaty texture and flavor. Add some beans, and a complete meal with proteins can be produced.

Ingredients
2 10-inch zucchinis
3 cloves garlic
1.5 cup cooked white beans
1 tbsp lemon juice
0.5 tsp sugar/honey
salt
black pepper
olive oil

Preparation
Set the grill on high. Wash the zucchini and slice into 1/8-inch slices lengthwise. Spray with olive oil sprinkle with salt and black pepper, and grill until light brown.

Cut zucchini into 1-inch rectangles. Add cooked white beans. 

Peel and crush the garlic, mix with a tbsp of olive oil. Add the lemon juice and whisk. Toss beans and zucchini with dressing. Serve immediately or refrigerate.
