Egg salad with scallions


My favorite egg salad by far: the scallions provide an excellent mild and fresh flavor. Delicious spread onto a crispy pita bread.

Ingredients
3 eggs
1-2 tbsp mayo
salt
pepper
3-5 scallions

Preparation
Add the eggs to a pot of water. Bring to a boil and simmer for 5 minutes. Let stand in the hot water for another five minutes. Move eggs to cold water and peel them.

Mince scallions, whites and greens into the same bowl.

Separate the egg whites from the egg yolks. Mash the yolks with the mayo until smooth. Mince the egg whites and fold in along with the scallions.


Season with salt and black pepper. Serve. Makes two servings.
