Spinach and goat cheese frittata


This was simply perfect. No meat, full of greens, and absolutely delicious.

Ingredients
5 eggs
3 oz goat cheese
1.5 cups spinach leaves
4-5 scallions
salt
black pepper
olive oil

Preparation
Shred spinach into bite-size pieces. Clean and cut scallions into small rings, separate white and green parts.
Whisk the five eggs and season with salt and a little black pepper.

Preheat the oven to 400F.

On the stovetop, sautee the white parts of the scallions for 2 minutes in a 9-inc skillet. Add the spinach and heat until it collapses and loses water. Add the green parts of the scallions and cook for one more minute. Remove it all onto a plate.


Add the eggs to the skillet and cook for 30 seconds. Sprinkle in the spinach and scallion mix. Crumble in the goat cheese.

Move to oven and cook for 3-4 minutes, until just set. Serve immediately with flatbread.
