Baked blueberry steel-cut oatmeal


This is a wholly satisfying, delicious, and healthy breakfast. Easy to prepare, though not very quick.

Ingredients
6 tbsp steel cut oatmeal
0.5 tsp baking powder
0.5 tsp cinnamon
0.25 tsp salt
0.5 cup blueberries
1.25 cup milk
0.5 tsp vanilla extract
3 tbsp maple syrup
0.5 egg
0.5 tbsp butter

Preparation
Mix the dry ingredients in a 4-by-8 inch glass baking dish. Preheat oven to 350F.

In a bowl whick together milk, egg, vanilla, and syrup.

Sprinkle the blueberries on top of the oatmeal mix. Pour on the milk blend. Tap the baking shape to let the milk sink down everywhere. Distribute 0.5 tbsp butter on top (if desired, I was not a fan).

Bake for 45-55 minutes, until set and oats are done. Serve warm or cover and refrigerate. It is delicious reheated as well.
