I have no idea if this dish has a name. I was pressed to quickly invent something for lunch, as I ran out of bread, and I'm generally not willing to buy the supermarket bread products. This turned out surprisingly tasty.
Ingredients
0.5 yellow onion
6 oz tilapia
2/3 cup rice
2 cups water
1 plum tomato
1 tsp cumin
1 tbsp ketchup
1 tsp Sriracha hot sauce
0.5 tsp paprika
0.25 tsp turmeric
0.5 tsp vegeta
1 tbsp vegetable oil
salt
black pepper
Preparation
Add the onions and oil to a pot. Cook until translucent, add the rice and cook, stirring constantly, until the rice grains are white. Remove from heat.
Add the spices and stir, heat together for 30-40 seconds. Add the water and tomatoes. Bring to a boil. Simmer covered on low, stirring occasionally.
When the water level is only a quarter inch above the rice, add the diced fish and mix in. Simmer covered until fish and rice are cooked. You can evaporate more water, if necessary.
