
I got to try this refreshing cucumber salad over the summer in Macedonia. It fits well with a list of heavy, meaty dishes, or just on its own as an afternoon snack. Due to its slight acidity it's a perfect appetizer. Since taratur has a ton of garlic in it, you must make sure everyone in the household consumes some...or else the people left out will find the ones who indulged rather smelly.
Ingredients
2 long, seedless cucumbers
4 cloves of garlic
2 cups plain yogurt
1 tbsp vegetable oil
salt
vinegar
paprika or walnuts to garnish
Preparation
Peel the cucumbers and the garlic. Mince or grind the garlic to a paste and mix with a little bit of salt and the oil.

Using the large slicer function of a grater, slice the cucumbers into thin slices.
Mix the cucumbers, yogurt, garlic paste. Add a little bit of vinegar, if the yogurt is not slightly sour. Allow to sit a few hours in the fridge.
Garnish with paprika,

or ground walnuts.
is it possible to replace the cucumber with something else? like a cool, refreshing mushroom?
