

If you like mashed potatoes, you will love this elegant baked version.
Ingredients
6 medium potatoes
1 egg
2 oz grated cheese
2 tbsp butter or 3 tbsp sour cream
salt
black pepper
Preparation
Peel and dice the potatoes. Cook in salty water, drain and mash with the butter/sour cream and cheese. Spice and mix until completely smooth.

Allow to cool for 5 minutes and blend in the egg until smooth. Scoop into a piping bag, and squeeze portions onto a buttered baking shape.

Bake in a 400F preheated oven for 15 minutes, then broil until the tops are golden brown.

You can spice this up with a variety of spices, and garnish it as you like with veggies. I like them plain, golden, delicious!
