Simple peach cobbler

An early winter visit of a midsummer recipe. Such refreshing warmth, the summer sun stored in golden peaches.

Ingredients
3 large peaches (1 lb)
zest of a lemon
0.5 tbsp lemon juice
2 tbsp butter
1/3 cup sugar
0.25 cup plus 2 tbsp flour
0.5 tsp baking powder
0.25 tsp salt
3 tbsp milk
2 tbsp hot water

Preparation
Heat oven to 350F. Wash and dry the peaches. Cut into 1-inch chunks.

Place the peaches into a 9-inch round Pyrex dish. Sprinkle with the lemon zest and drizzle with the lemon juice.

Beat the room temperature butter with most of the sugar for one minute. Add the flour, baking powder and salt and beat for another minute. (I did this with a handheld mixer). Slowly mix in the milk and beat for about two minutes, until light and fluffy.


Scoop the batter onto the peaches. Spread it evenly over the fruit. Sprinkle with the remaining sugar and drizzle with the hot water. Bake 30-50 minutes, until tops are golden brown. Remove and serve warm with whipped cream.
