Tuna salad with sun-dried tomatoes


This was simply the best tuna salad I've ever encountered. Made with home made pesto and sun-dried tomatoes from the co-op, this was a tasty, not at all fishy dish.

Ingredients
2 cans of tuna
1 tbsp mayo
1 tbsp basil pesto
4-6 sun-dried tomatoes
1 clove garlic
0.25 tsp oregano

Preparation
Rehydrate the sun-dried tomatoes, then chop them and mix them with minced garlic and dried oregano. Set aside.

Drain the tuna and add the mayo, pesto and tomato bits. Mix well. Serve with toast or in a sandwich.
