Caramelized butternut squash

This was surprisingly simple, mildly sweet, soft and perfect. A must have for all winter squash fans.

1 butternut squash
2 tbsp butter
2 tbsp brown sugar
0.25 tsp salt
black pepper

Preheat the oven to 400F.

Peel the butternut squash and cut into two pieces lengthwise. Remove the seeds. Slice into 1-inch slices, then cube into 1-inch cubes. Be sure that the pieces are about the same size.

Toss with melted butter, brown sugar, salt and a sprinkling of black pepper. Spread out into a single layer on a baking sheet lined with aluminum foil.

Bake for 50 minutes, turning twice during this period. Serve while still warm.
