Stuffed zucchini


After trying this, we discovered that zucchini is not at all the favorite food of my husband. But he did love the stuffing :-)

Ingredients
1 large zucchini
1 red bell pepper
1 green pepper
0.5 cup chopped chives
2 tomatoes
12 oz mushrooms
2 cloves garlic
0.5 tsp cayenne
1 tsp black pepper
1 tsp oregano
4 oz grated cheddar
2 oz grated Parmesan
0.25 cup breadcrumbs
3 eggs
1 tbsp butter

Preparation
Scrape out the inside of the zucchini, so only a quarter-inch thick shell remains. The skinnier the better... Nuke the shell in the microwave for 7 minutes. Chop up the inside and set aside.


Slice the mushrooms and brown on 1 tbsp butter until golden. Add the peppers and soften. Add the garlic and chives, cook for 30 seconds. Set aside.


Add the inside of the zucchini (chopped) to a pan, add the spices and cook until reduced. Most liquid should evaporate from it. This will take a while...


Mix the zucchini mixture, mushroom and peppers, chopped tomatoes with the breadcrumbs, grated cheddar and eggs. Fill into nuked zucchini shell. Sprinkle top with Parmesan.

Bake in preheated 350F oven for about 40-50 minutes, until zucchini shell is softened and stuffing is nicely browned. Serve!
