Buffalo chicken pizza

Another pizza making success.

Ingredients
1 tsp yeast
1 tsp honey
2/3 cup warm water
1 tsp salt
1.5 cup flour
2 tbsp olive oil
1 chicken breast
1 tbsp vegetable oil
3 tbsp Frank's hot sauce
2 tbsp Ketchup
0.25 cup Ranch dressing
4-5 oz mozzarella
salt

Preparation
Bloom the yeast with the honey and half of the water. Add the remaining water, 1 tbsp olive oil and the flour. Knead for 2 minutes. Allow to rest for 5 minutes. Add the salt and mix in. Knead for 1 minute. Place in an oiled bowl and allow to rise for 40 minutes.

Press into a pizza pan that was coated with 1 tbsp olive oil. Cover with foil and allow to rise for another 20 minutes. Meanwhile, cut the chicken breast into two thin cutlets. Salt and allow to sit for 5 minutes. Pat dry and brown in a cast iron skillet heated with vegetable oil, for 5 minutes on both sides. Remove onto a plate and cover with foil. Allow to rest for 10 minutes.

Cut into small strips and toss with ketchup and Frank's hot sauce. Spread the pizza dough with ranch dressing, sprinkle the chicken on top and distributed the sliced mozzarella on it.

Bake on the bottom rack of a 450F oven for 5 minutes, then on the middle rack until golden brown (another 5 minutes).

Cool on a cookie rack a serve still warm.
