Roasted pumpkin seeds

A high-fiber, healthy snack.

Ingredients
0.5 cup pumpkin seeds
2 cups water
0.5 tbsp salt
1-2 tbsp olive oil

Preparation
Remove the seeds of a small sugar pumpkin and wash.

Add the seeds to a pot, add the water and salt. Bring to a boil and simmer for 10 minutes. Drain.

Toss seeds with olive oil and distribute on a cookie sheet. Bake for 10-20 minutes in a 400F preheated oven. Bake until desired color is reached. Allow to cool on baking sheet.
