Tomato-basil panini

Toasting the fresh tomatoes inside this panini really enhanced their flavor. And basil, well, you can't go wrong with basil.

1 Cuban bread
4 oz Monterey Jack cheese
1 ripe tomato
5-6 basil leaves
1 tbsp mayo
5-6 pepperoni slices

Slice the bread in half and spread both sides with mayo. Layer the pepperoni on the bottom, cover with cheese, then with basil and finally tomato slices.

Close the sandwich and spray with vegetable oil. Toast until golden brown and cheese is melted. Serve while still warm.
