Chicken quesadillas

I had some leftover baked chicken, tortillas and some lightly smoked cheese. That's my excuse.

Ingredients
2 medium flour tortillas
1 baked chicken thigh
3 oz cheese
2 tbsp salsita hot sauce
sour cream
salsa
(guacamole)

Preparation
Preheat the oven to 400F.

Shred the chicken thigh and the cheese.

Spray a cookie sheet with oil. Plase a tortilla on top. Spread with 1 tbsp hot sauce. Distribute the chicken and cheese on it. Cover with another hot-sauced tortilla, saucy side down.

Bake until lightly browned on one side. Flip and toast the other side too, until crispy.

Cut into quarters, serve with guacamole, hot vegetable salsa and sour cream. Quick and easy!
