Breaded fish

Perfect with mashed potatoes or potato salad. Not very oily at all.

Ingredients
4 tilapia fillets
1 tsp cayenne
1 cup breadcrumbs
0.25 cup flour
2 eggs
2 tbsp milk
salt
oil

Preparation
Whip up the eggs and add the milk. Whisk in and salt lightly. Mix the breadcrumbs with the cayenne and spread onto a flat plate.

Dip the fish fillets into flour followed by egg and then breadcrumbs. Set aside to rest for 5 minutes.

Preheat the oil. You can deep fry these proper, but I used just a little bit of oil, about 0.5 inch deep. Make sure the oil is hot, not smoking though! (I set the stove to medium-high).

The fish will cook quickly, what you are aiming for is browning the breadcrumbs. Remove fish onto paper towels, allow to cool a bit before serving with tartar sauce and you favorite potato side. (mashed, oven baked, fried, and potato salad come to mind)
