Baked chicken cordon bleu

A holiday and restaurant favorite in Hungary. Though normally deep-fried, it works quite well baked too.

Ingredients
2 chicken breasts
2 slices of ham
4 oz mozzarella
0.25 cup breadcrumbs
0.5 tsp paprika
0.5 tsp black pepper
salt
cooking spray

Preparation
Cut half of the cheese into sticks and freeze until solid.

Cut in the chicken breasts by laying it onto a flat surface and placing your palm flat on top. Cut with the knife parallel to your palm and the counter surface. Do not go all the way to the other side.

Open up the chicken and hammer it into a 0.25 inch-thick cutlet. Lightly salt and set aside for 10 minutes.

Meanwhile, preheat the oven to 350F and spray a cookie sheet with canola oil.

Lay the chicken breasts into the breadcrumbs, sprinkle with the spices. Place the ham slices on top (I would use thinner ones than shown on the picture) then add in the cheese sticks. Roll up and fix with toothpicks. I actually used bamboo skewers soaked in water and broken into three pieces. A skewer per breast was sufficient to hold it all together.

Place the rolled up chicken breasts onto the cookie sheet and spray the top with canola oil as well.

Bake in the preheated oven for 20-25 minutes. Shred the other half of the cheese on top while still warm. Serve!
