Caralemized onion omlette

My grandmother used to make this for me. It was one of my favorite comfort foods. In her version there was more of the onions than the eggs.

Ingredients
3 eggs
1 large yellow onion
1 tsp olive oil
salt

Preparation
Cut the onion in half and slice it into 0.25 inch thick slices. Slowly brown in a heavy pan with the oil, heating it on medium-low.

When browned to the desired color, add the whipped eggs and salt to taste. Finish cooking.

Serve with a good slice of crusty bread.
