Cold sesame noodles

I love sesame noodles with a healthy portion of vegetables in it. Such a delightful taste, and a relatively new discovery for me. We don't eat them in Hungary.

Ingredients
8 oz spaghetti or linguine pasta
4 cloves garlic
1.5 tbsp sugar
1.5 tbsp rice vinegar
3 tbsp soy sauce
0.5 tbsp starch
2 tbsp sesame oil
1 tsp vegetable oil
1 tsp Sriracha sauce
3 green onions
2-4 carrots
1 tbsp sesame seeds

Preparation
Cook the pasta till al dente. Meanwhile prepare the other ingredients.

Mince the garlic. Slice the scallions into circles, you can slice some of the green parts slanted for decoration. Shred the carrots in the large shredder.

Toast the sesame seeds in a hot pan. Cool and add the vegetable oil and garlic. Heat until fragrant.

Mix in the sugar and vinegar, heat and stir until all sugar dissolves. In a small dish mix the starch with the soy sauce. Add the smooth mixture to the pan and bring to a boil once.

Drain the pasta and pour the sauce and vegetables on top. Mix and serve warm or cold. I prefer it cold. You can also add diced baked chicken and other sources of protein, eg. lima beans to the dish.
