Carrot salad

What to do with big, chunky, hard...but healthy carrots. While crunching them in is a possibility for some, some of us fear for their teeth. Grating them is my solution. Taking a large carrot and shredding it with the "big holes" on my grater takes about 20 seconds. The improvement is way more substantial.

Ingredients
2 large carrots
2 ripe tomatoes
1 avocado
sesame-ginger salad dressing
Preparation
Clean the veggies. Shred the carrots. Chop the avocado (inside the peel, and then flip it out: much easier, and yields nicer cubes).

Arrange on your plate and drench in your favorite salad dressing. Serve. Eat. Stay healthy.
