Homemade pizza sauce

Not quite as good as spreading basil pesto on your pizza, but the best of the tomato variety. As recommende by Chef John.

Ingredients
28 oz can whole San Marzano tomatoes
0.5 cup water
3 garlic cloves
2 tbsp olive oil
0.5 tsp crushed pepper
0.5 tsp salt
0.5 tsp sugar
0.25 tsp dried basil
0.25 tsp thyme
0.5 tsp dried oregano
0.25 tsp baking soda

Preparation
Half the tomatoes and squeeze out the seeds. Drain back the liquid through a sieve.

Add the minced garlic and the spices to the olive oil to sautee. Add the tomatoes, sugar and the water. Simmer for 40 minutes. Add baking soda to react with the acid. Remove the foam that forms.

Blend to the desired chunkiness.
