Double chocolate, almond babka

A tasty and easily modifiable sweet bread.

Ingredients
dough:
3-4 cups flour
1 cup milk
2 tsp yeast
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 egg yolk
0.5 tsp salt
0.5 cup melted butter

filling:
0.5 cup white chocolate chips
0.5 cup dark chocolate chips
1/4 cup melted butter
1 tsp cinnamon
0.5 cup chopped almonds

Preparation
Mix one cup of flour, the milk and the yeast. Beat together until smooth, cover with a plastic wrap and allow to rest for one hour.

Add the melted butter, salt and eggs. Mix well.

Add the sugar, mix until smooth again.

Add in half of the remaining flour and mix it in. Add the rest in small amounts, until the dough comes together.

Pour out onto a floured surface and knead until smooth and sticky.

Coat with oil in a bowl, and cover with plastic wrap. Allow to rise for one hour, or until it doubles.
Meanwhile, mix the ingredients for the filling.

When the dough is ready, roll out on a lightly floured surface into a 16x12 inch rectangle.

Spread the filling on top, leaving one half inch on the edges free.
Starting from the shorter sides, roll the dough toward the middle, until the folds meet.

Close the seam and pick up the dough. Twist it in your hand and place into a well buttered 5x9 inch baking pan.

Cover with foil and allow to rise for another 1-2 hours.

Bake in a 325-350F preheated oven for about an hour. Cool before moving onto a wire rack. You can ice this, if you so desire.
