Tomato-cheese crostini

A simple, quick and light summer dinner.

Ingredients
good quality chewy bread
2 ripe tomatoes
4 oz of your favorite cheese
olive oil
pepper flakes
salt
fresh parsley

Preparation
Preheat the oven to 450F. Slice the bread into 0.5 inch thick slices.

Wash the tomatoes and cut into slices. Grate the cheese.

Lay out the bread slices onto a baking sheet. Top the bread with slices of tomato, salt to taste, followed by the cheese and some pepper flakes.

Drizzle the tops with olive oil and bake in the preheated oven for 10-15 minutes, until the bread reaches the desired crunchiness and the cheese is properly browned.

Serve with chopped fresh parsley and a glass of white wine.
