Peanut butter-jelly palacsinta

Palacsinta is the Hungarian equivalent of crepes, blintzes or thin pancakes. The options for fillings are endless, and some palacsinta cafes in Hungary have hundreds to offer.
My favorite ones involve rummy chestnut puree, sweet cottage cheese, simple chocolate and home made jams.

Ingredients
300g flour
3 eggs
1/3 cup of vegetable oil
pinch of salt
1/4 tsp cinnamon
1 tbsp sugar
milk

Preparation
Mix the dry ingredients, then add in the eggs and progressively the milk as well. Whisk, and stir until you get the batter to the consistency of heavy cream.

Cover and allow to rest in the fridge for 1 hour. Cook in a hot pan over medium-high heat.When one side is slightly browned, flip and cook the other side as well.Fill immediately.
