Browning mushrooms

Mushrooms are nutritious and are said to have a list of health benefits. I'm not sure about those, but they are definitely tasty. My favorite Christmas meal, which I haven't posted here yet, uses mushrooms as one of the main ingredients.

Browning mushrooms before using them in a dish, let that be a stew, pizza or to top crostini, enhances and matures their flavor. It's a bit tricky, as around 80-90% of mushrooms is water by weight. But we don't want the mushrooms to cook, we want them to brown.

The trick: dry mushrooms added sparsely to a very hot pan. Take your mushrooms, clean and dry them, preheat a frying pan on high heat, add a little bit of oil to your pan (this is not stricktly necessary), and toss in the mushrooms. If needed, repeat the process in order to avoid crowding the mushrooms.

Allow to cook for a while before turning them. It takes time to brown the mushrooms, so sit back and resist stirring them every 10 seconds.

  2. I do like them without anything added :-) but they were very tasty with sun-dried tomato pesto on pizza!
